Applied Food Service Sanitation is designed to assist the manager or potential manager applying sanitation principles in the operation of a food service establishment. Students will learn to identify the causes of food-borne illness, identify and apply correct procedures for cleaning and sanitizing, recognize problems and potential solutions associated with facility, equipment and layout. The Illinois code related to food service establishments will be discussed. Students will take the ServSafe Protection Food Manager Certification exam in class at the end of the course. This class is required in Illinois for Certified Food Protection Manager Certification (CFPM) and is an ANSI certified course accepted by the Illinois Department of Public Health (IDPH). Upon successful completion of the exam with a passing grade, students will attain the ServSafe CFPM. Licenses are valid for five years.

A textbook is required for this class: ServSafe Manager, 7th Edition. The textbook is available at the IVCC Bookstore located at the main campus in Oglesby or can be purchased in advance online at http://www.ivccbookstore.com/category/10002562. It is recommended that students purchase the book in advance and begin review prior to class due to the fast paced nature of the class.
